Lentil Stew
4 Cups Red Lentil
3 Cups Onion Diced
½ Cup Oil
1 Tbsp. Ginger
2 Tbsp. Garlic
3 Tbsp. Berbere
3 Tbsp. Tomato Paste
Salt
Wash lentils and soak for 10 minutes. In a pot cook diced onion until brown by adding water. Then oil, Berbere and tomato paste added to the onion. Reduce the heat to medium. When the sauce is ready add lentil, garlic and ginger. Let it simmer until the lentils are tender.
New Year's Leg of Lamb in Hot Sauce
Leg of lamb
2 cups red onion
½ berbere (red hot pepper paste)
½ cup spice butter
½ tsp ginger
2-table spoon minced garlic
1 tsp black pepper
1 cup red wine
1 tsp cardamom
2cups water
Cut meat into thin strips leaving it attached to the bone. Boil the meat in enough water until tender or leave it raw and put aside.
In a saucepan cook onions until brown. In a bowl mix butter, the red pepper and add to the browned onion. Add 2 cups of water and simmer, and then add the spices let sauce simmer on low heat for 20 minutes.
When serving, dip the boiled or the raw lamb in hot sauce for 10 minutes.
Vegetable Stew (Tikil Gomen)

3 scallions
2 leaf Basil
½ Cup oil
6 Medium Potato Diced

1 Large Cabbage Chopped
10 Carrots Diced
3 Tbsp. garlic
1 Tsp. ginger
1 Tsp. Turmeric
½ tsp. Black Pepper
To Taste Salt
On medium heat cook onion, carrot, oil and one tsp. salt in a large pot .Add potato, garlic, turmeric, ginger, scallions and cook for 10 minutes .The chopped cabbage is added starring gently until it is tender. Season to taste with salt, black pepper and basil.
