In 2007 a small team of us traveled to Ghana, West Africa. Our Canadian friend Paul was already living in the capital Accra and felt there was real potential for tourism in this part of the world. We thought there might be a chance for us to shoot some footage of West Africa with a positive slant – something missing and seldom seen through most media. We proposed to the Ghanaian tourism board a 22-minute promotional video showcasing travel potential around the country. They loved the idea. They supplied us with a vehicle, a guide, and a signed letter from the minister of tourism – essentially, the keys to the country. |

4 Cups Red Lentil Wash lentils and soak for 10 minutes. In a pot cook diced onion until brown by adding water. Then oil, Berbere and tomato paste added to the onion. Reduce the heat to medium. When the sauce is ready add lentil, garlic and ginger. Let it simmer until the lentils are tender. |
